This quick and easy peach and tomato salsa can be thrown together in minutes, and goes well with pork, chicken and fish. It's gluten-free, too.
1 cup diced peaches
1 cup diced tomtato
1 tbsp olive oil
2 tsp cider vinegar
1 tbsp chopped cilantro, optional
Combine peaches and tomatoes in a bowl. Add olive oil, vinegar and salt, and toss just to combine.
Sprinkle with cilantro, if using.
This salsa goes perfectly with our Tandoori Pork Tenderloin.
