Ingredients
1 1/2 cups thinly sliced mini cucumbers, (about 3)
1 small yellow sweet pepper, thinly sliced
1/2 cup thinly sliced radishes, (about 6)
1 tbsp seasoned rice vinegar
1 tbsp olive oil
Instructions
1. Combine vegetables, add vinegar and oil and toss to coat.
Let stand for 15 min to allow flavours to combine.

Notes:
Mix spices in a bag ahead of time and bring with you. Cook rice in pot with boiling water.
