Crunchy Vegetable Salad

  • 1 1/2 cups thinly sliced mini cucumbers, (about 3)

  • 1 small yellow sweet pepper, thinly sliced

  • 1/2 cup thinly sliced radishes, (about 6)

  • 1 tbsp seasoned rice vinegar

  • 1 tbsp olive oil


  • 1. Combine vegetables, add vinegar and oil and toss to coat.

  • Let stand for 15 min to allow flavours to combine.

Protein 1g, Carbohydrates 5g, Fat 3g, Fibre 1g, Sodium 140mg.

Mix spices in a bag ahead of time and bring with you. Cook rice in pot with boiling water. Try this delicious salad with Thai Grilled Chicken.
