Everyone can clink glasses with this deliciously bubbly 'champagne' mocktail.
1 1/2 cups apple juice, preferably chilled
1/4 cup frozen white grape juice concentrate
2 1/4 cups club soda, preferably chiled
2 mint sprigs, optional
Stir apple juice with grape concentrate in a pitcher until dissolved. Pour in club soda. Stir in mint, if desired. Pour into plastic champagne flutes.
