Air Fryer Honey Butter-Basted Pretzel Bites and DIY Seasonings

Makes: 50 bites
Ingredients
For the pretzel bites:
2 ½ cups warm water, divided
2 ¼ tsp active dry yeast (8 g)
1 tsp Windsor coarse sea salt
1 tbsp granulated sugar
3 tbsp melted butter, divided
4 cups all-purpose flour (480 g)
1 tbsp baking soda
2 tbsp honey
2 tsp Windsor coarse sea salt (for finishing)
For the Savoury Garlic Crunch:
1 tbsp white sesame seeds
1 tbsp black sesame seeds
1 tbsp dried onion flakes
1 tbsp dried garlic flakes
1 tbsp Windsor coarse sea salt
½ tbsp poppy seeds
For the cinnamon sugar:
1 tsp ground cinnamon
3 tbsp granulated sugar
Optional: for optimal flavour balance and a craveable sweet-savoury twist, add a pinch of Windsor coarse sea salt.
Method
- In a large bowl, mix together yeast and 1 ½ cups warm water. Allow to sit for 1 minute until slightly frothy. Whisk in salt, sugar and 1 tbsp butter.
- Add the flour 1 cup at a time and stir with a wooden spoon after each addition. Once the last cup of flour has been added, stir until almost all of the flour has been incorporated. The dough will appear slightly scraggly.
- Using lightly floured hands, turn the dough onto a lightly floured surface and knead for 5 minutes until the dough is smooth and bounces back slightly when you press your thumb into it. Cover with a kitchen towel and rest for 10 minutes.
- While the dough rests, prepare the honey butter and your chosen seasonings:
- In a small bowl, combine honey and remaining butter.
- In a small bowl, combine white sesame seeds, black sesame seeds, dried onion flakes, garlic flakes, Windsor coarse sea salt and poppy seeds.
- In a small bowl, combine cinnamon and sugar.
- In a small bowl, whisk together remaining 1 cup warm water and baking soda.
- Lightly oil the insides of the air fryer and preheat to 380°F.
- Using a dough cutter or knife, divide dough into 4 equal sections. Working with 1 section at a time, roll into 19- to 20-inch-long ropes that are approximately 1 inch thick in diameter. Cut into 1 ½-inch-wide pieces.
- Brush the surface of each piece evenly with the water–baking soda mixture.
- Place into the preheated air fryer basket, leaving just enough space between each so they are not touching. Air fry until evenly browned, 7 to 9 minutes. Repeat rolling, cutting and air frying until all pretzel bites are cooked.
- To finish: brush with the honey butter and sprinkle over desired seasonings.
Oven Instructions (follow steps 1-8 above):
- Arrange on a parchment-lined baking sheet, leaving ½-inch space between each bite.
- Bake in the middle of a preheated 425°F oven until evenly browned, 10 to 12 min.
