Cucumber Yogurt Dressing

Ingredients

  • 1 cup grated English cucumber, (wash, but don't peel)

  • 1 cup plain yogurt, (low fat or regular)

  • 1/4 tsp salt

Instructions

  • After grating the cucumber into a strainer, squeeze as much of the liquid out by hand as possible. This is a good job for a kid - just have her grab a handful and squish out all the water. Transfer to a bowl. Stir in the yogurt.

  • Line a strainer or colander with a paper coffee filter and place it over a bowl. Dump the yogurt mixture into the filter and let it drain, refrigerated, for several hours (or overnight). The longer you drain it, the thicker it becomes - I prefer it to be the consistency of mayonnaise. Spoon the yogurt mixture into a bowl and stir in the salt. Taste and adjust the seasoning if necessary.
