What are you making for dinner tonight? What’s that, you don’t have a plan? Oh, dear… (shakes head sadly).

Just kidding—me neither! For real. You think having a full-time food blog is any kind of guarantee against meal-time disorganization? Not a chance. But that’s OK because I have a back pocket full of recipes we like to use for "The Lightning Round."

You know. For those days when traffic was ridic, your kid refused to leave the playground in a timely fashion, or you just couldn’t decide until 5:45 what dinner was going to be.

I promise, these are easy and so, so fast to put together.
