This sweet potato mash with ginger recipe is a fresh new twist on a dinnertime staple. Omit the ginger if your little ones are nervous about spice.
1 kg sweet potatoes, (about 3), peeled and cut into 2-in. chunks
1/4 cup unsalted butter
2 tsp grated ginger
1/2 tsp salt
1/8 tsp ground cinnamon
pinch ground nutmeg
Place sweet potatoes in a pot and cover with cold water. Bring to a boil over high heat, and cook for 20 min or until tender. Drain and return to pot. Place on a turned-off or low burner to evaporate any remaining water.
Add butter, ginger, salt, cinnamon and nutmeg, and mash until smooth.
