Sweet Potato Mash with Ginger

This sweet potato mash with ginger recipe is a fresh new twist on a dinnertime staple. Omit the ginger if your little ones are nervous about spice.

Ingredients

  • 1 kg sweet potatoes, (about 3), peeled and cut into 2-in. chunks

  • 1/4 cup unsalted butter

  • 2 tsp grated ginger

  • 1/2 tsp salt

  • 1/8 tsp ground cinnamon

  • pinch ground nutmeg

Instructions

  • Place sweet potatoes in a pot and cover with cold water. Bring to a boil over high heat, and cook for 20 min or until tender. Drain and return to pot. Place on a turned-off or low burner to evaporate any remaining water.

  • Add butter, ginger, salt, cinnamon and nutmeg, and mash until smooth.
