Sweet Potato Mash with GingerBy Eshun Mott

This sweet potato mash with ginger recipe is a fresh new twist on a dinnertime staple. Omit the ginger if your little ones are nervous about spice.
- 1 kg sweet potatoes , (about 3), peeled and cut into 2-in. chunks
- 1/4 cup unsalted butter
- 2 tsp grated ginger
- 1/2 tsp salt
- 1/8 tsp ground cinnamon
- pinch ground nutmeg
- Place sweet potatoes in a pot and cover with cold water. Bring to a boil over high heat, and cook for 20 min or until tender. Drain and return to pot. Place on a turned-off or low burner to evaporate any remaining water.
- Add butter, ginger, salt, cinnamon and nutmeg, and mash until smooth.
