Try this simple but satisfying primavera pasta salad as the perfect side tonight.
2 tbsp olive oil
1/2 cup red pepper, diced
1/2 cup red onion, diced
2 tbsp garlic, chopped
250 g orzo
1 1/2 cups small broccoli, pieces
1/2 cup frozen green peas
salt, to taste
pepper, to taste
3 tbsp Parmesan, grated
Heat olive oil in a large frying pan over medium-high. Add red peppers and red onion and sauté for 2 min, or until vegetables begin to soften. Add garlic and sauté 1 min longer.
Cook orzo in boiling salted water until just tender, adding broccoli pieces to pasta for the last 2 min and frozen peas for the last 1 min. Drain and rinse with running water until cold. Add orzo to sautéed vegetables and toss to combine. Season with a pinch of salt and pepper. Sprinkle with grated Parmesan cheese.
