Primavera Pasta Salad

Try this simple but satisfying primavera pasta salad as the perfect side tonight.
Ingredients
- 2 tbsp olive oil
- 1/2 cup red pepper , diced
- 1/2 cup red onion , diced
- 2 tbsp garlic , chopped
- 250 g orzo
- 1 1/2 cups small broccoli , pieces
- 1/2 cup frozen green peas
- salt , to taste
- pepper , to taste
- 3 tbsp Parmesan , grated
Instructions
- Heat olive oil in a large frying pan over medium-high. Add red peppers and red onion and sauté for 2 min, or until vegetables begin to soften. Add garlic and sauté 1 min longer.
- Cook orzo in boiling salted water until just tender, adding broccoli pieces to pasta for the last 2 min and frozen peas for the last 1 min. Drain and rinse with running water until cold. Add orzo to sautéed vegetables and toss to combine. Season with a pinch of salt and pepper. Sprinkle with grated Parmesan cheese.
