Over-Easy Egg Burrito

Ingredients

  • 1 large egg

  • 1 small flour tortilla

  • pinch salt

  • pinch black pepper

  • 1 tbsp shredded cheddar

  • 1/4 sliced small avocado

  • chopped cherry tomatoes

Instructions

  • Heat 2 tsp unsalted butter in a small frying pan over medium heat.

  • When it’s bubbling, crack in 1 large egg. Cook for 2 min or until edges are golden and white is mostly set. Carefully flip egg over and cook for 1 min longer or until white is cooked through but yolk is still runny.

  • Transfer egg to a small flour tortilla and sprinkle with a pinch of salt and pepper and 1 tbsp shredded cheddar cheese. Top with ¼ sliced small avocado and chopped cherry tomatoes.

  • Carefully roll and eat.

Tip:

Tortillas can be messy for children and even adults to eat, so roll half of the burrito in tinfoil (it will hold everything together – including the drips!). Kids can peel the foil down as they eat. Instant shirt-saver!
