Maple Sweet Potato Wedges

Ingredients

  • 2 large sweet potatoes

  • 2 tbsp olive oil

  • 1/2 tsp hot-pepper flakes

  • 1 tsp salt

  • 1 tbsp maple syrup

Instructions

  • Peel sweet potatoes and cut in half lengthwise; then cut into into long, thin wedges (no thicker than ½ in.).

  • Toss potatoes with olive oil, chili powder and salt.

  • Grill potatoes on medium-high heat for about 15 min, turning as needed until tender and grill-marked.

  • Brush lightly with maple syrup, and grill 1 min longer.

Tip:

Patience is the trick to these wedges. If you grill them over too high a heat, they will burn before they are tender. Tenting loosely with foil can help speed up the process.
