Make-Ahead Mashed Potatoes

Nothing says comfort food like mashed potatoes. It's the go-to for most holiday dinners, and the beauty of this recipe—you can make it ahead of time for easy entertaining.
Ingredients
4 lb. Yukon Gold potatoes, peeled, quartered
1/3 cup unsalted butter
1 tsp salt
1 cup sour cream
1 tsp smoked or regular ground paprika
1 green onion, finely chopped
Instructions
Preheat oven to 400F.
Place potatoes in a pot with enough cold, salted water to cover. Bring to a boil over high heat and cook for 15 min, or until potatoes are tender when pierced with a fork.
Drain and return potatoes in pot to the stove over low heat for 2 min to evaporate any excess water.
Add butter and salt and mash with a potato masher until smooth. Add sour cream and stir to incorporate.
Scrape potatoes into a buttered 8 x 10-in. casserole dish and use the back of a spoon to smooth top. Sprinkle with paprika. Cover and bake for 30 min or until top has begun to brown and potatoes are heated through. Sprinkle with green onion just before serving.
