Green Beans with Warm Pistachio Vinaigrette

Quinoa, Corn & Lentil Salad

Ingredients

  • 1/4 cup unsalted butter

  • 2 tbsp chopped, sheeld, raw, unsalted pistachios

  • 2 tbsp sherry vinegar

  • 1 tbsp water

  • 1/8 tsp salt

  • pinch granulated sugar

  • 1 lb. green beans, trimmed

  • 3 tbsp chopped basil

Instructions

  • Melt butter in a small frying pan over medium heat until it bubbles. Add pistachios and sauté for 1 to 2 min or until butter is lightly browned and nuts are toasted. Remove from heat. Add vinegar, water, salt and sugar to frying pan and stir to combine.

  • Bring a medium pot of salted water to a boil and blanch green beans for 3 to 4 min or until tender-crisp. Toss beans with vinaigrette and basil.

Tips:

If you have a mini food processor, you can make a smooth green dressing out of the pistachios, basil, water and vinegar.
