This peach salsa is unreal on grilled chicken or fish, or as a dipping sauce for chicken fingers. Or, yes, even with tortilla chips.
3 peaches, peeled, pitted and chopped
2 green onions, chopped
1 hot chili pepper, seeded and minced (optional)
1/4 cup chopped cilantro
1 tbsp balsamic vinegar, (or cider vinegar)
1 tbsp granulated sugar
Mix all the ingredients together in a bowl and let sit for at least 30 minutes to allow the flavours to blend. Incredible.
