Beans are the perfect vegetarian burrito filling. Prep the beans on the weekend and this dinner comes together quickly in a pinch.
- 2 cups Brothy Bean recipe , (thawed)
- 1/4 tsp smoked paprika
- 1 lime , juiced
- grated cheese
- 1 avocado , sliced
- hot sauce , optional
- Combine Brothy Beans (thawed) with smoked paprika in a small pot and bring to a simmer.
- Purée with a potato masher or immersion blender and continue to cook until very thick. Stir in the juice of lime.
- Layer in warm tortillas with grated cheese, salsa, sliced avocado and hot sauce.
