Beans are the perfect vegetarian burrito filling. Prep the beans on the weekend and this dinner comes together quickly in a pinch.
2 cups Brothy Bean recipe, (thawed)
1/4 tsp smoked paprika
1 lime, juiced
tortillas
grated cheese
salsa
1 avocado, sliced
hot sauce, optional
Combine Brothy Beans (thawed) with smoked paprika in a small pot and bring to a simmer.
Purée with a potato masher or immersion blender and continue to cook until very thick. Stir in the juice of lime.
Layer in warm tortillas with grated cheese, salsa, sliced avocado and hot sauce.
