Bean and cheese burritos

Bean and cheese burritos

Beans are the perfect vegetarian burrito filling. Prep the beans on the weekend and this dinner comes together quickly in a pinch.


  • 2 cups Brothy Bean recipe, (thawed)

  • 1/4 tsp smoked paprika

  • 1 lime, juiced

  • tortillas

  • grated cheese

  • salsa

  • 1 avocado, sliced

  • hot sauce, optional


  • Combine Brothy Beans (thawed) with smoked paprika in a small pot and bring to a simmer.

  • Purée with a potato masher or immersion blender and continue to cook until very thick. Stir in the juice of lime.

  • Layer in warm tortillas with grated cheese, salsa, sliced avocado and hot sauce.
