Cottage Cheese with Macerated Berries

Move over, jam—we’ve got a fresh way to enjoy fruit on toast! Tossing berries with a little lemon, honey and mint brings out their juices, making them great on their own or as a tasty part of this breakfast. A little pepper brings out the sweetness of the berries.

Ingredients

  • 2 cups halved or quartered strawberries

  • 1 tbsp lemon juice

  • 1 tbsp honey

  • 2 tsp torn mint, or lemon balm

  • 4 slices multi-grain bread

  • 8 tbsp pressed cottage cheese

  • black pepper, optional

Instructions

  • Mix strawberries, lemon juice, honey and mint or lemon balm. Toss gently to combine. Let stand 5 min or until juices are released.

  • Toast the slices of multi-grain bread and spread each slice with 2 tbsp of cottage cheese. Spoon berries on top and sprinkle each with a pinch of pepper (if desired).

Tip:

If you’re not familiar with pressed cottage cheese, it’s like deli-style cream cheese but with more protein and a slightly savoury edge. (Use cheese labelled 10% MF for a richer flavour.) If you can't find pressed cottage cheese, swap in ricotta, which has a similar texture and flavour.
