Chopped Cucumber Salad

Make a Mediterranean salad plate or stuff pitas with salad and hummus for a simple, delicious meal.


Ingredients

  • 2 tbsp minced shallots
  • 4 tsp white-wine vinegar
  • 1 tbsp olive oil
  • 1/4 tsp Asian chili sauce
  • 1/4 tsp granulated sugar
  • 1/4 tsp salt
  • 3 cups diced mini cucumber , (about 5)
  • 3 tbsp chopped mint

Instructions

  • Place shallots in a small bowl. Add vinegar, oil, chili sauce, sugar and salt. Stir to combine. Toss with cucumbers just before serving and sprinkle with mint.
