Chopped Cucumber Salad

Make a Mediterranean salad plate or stuff pitas with salad and hummus for a simple, delicious meal.
Ingredients
- 2 tbsp minced shallots
- 4 tsp white-wine vinegar
- 1 tbsp olive oil
- 1/4 tsp Asian chili sauce
- 1/4 tsp granulated sugar
- 1/4 tsp salt
- 3 cups diced mini cucumber , (about 5)
- 3 tbsp chopped mint
Instructions
- Place shallots in a small bowl. Add vinegar, oil, chili sauce, sugar and salt. Stir to combine. Toss with cucumbers just before serving and sprinkle with mint.
