Make a Mediterranean salad plate or stuff pitas with salad and hummus for a simple, delicious meal.
2 tbsp minced shallots
4 tsp white-wine vinegar
1 tbsp olive oil
1/4 tsp Asian chili sauce
1/4 tsp granulated sugar
1/4 tsp salt
3 cups diced mini cucumber, (about 5)
3 tbsp chopped mint
Place shallots in a small bowl. Add vinegar, oil, chili sauce, sugar and salt. Stir to combine. Toss with cucumbers just before serving and sprinkle with mint.
