Broccoli Cheddar Tots

Finger foods are fun. Make these broccoli-packed cheddar tots for a snack, side dish or bring it to your next potluck.
Ingredients
- 1 ¼ tsp salt , divided
- 6 cups broccoli florets , (about 2 heads)
- 1 egg
- 2 cups shredded old cheddar cheese
- ¾ cup panko bread crumbs
- ½ cup chopped green onions
- ½ tsp pepper
Instructions
- Preheat oven to 400F. Line a baking sheet with parchment.
- Fill a large pot with water and bring to a boil. Add 1 tsp salt. Add broccoli and cook for 1 min. Remove to a large bowl of ice water and submerge broccoli to stop cooking. Drain and pat dry with kitchen towel.
- Pulse broccoli in a food processor until finely chopped, then transfer to a large bowl. Add egg, cheddar, panko, green onions, pepper and remaining ¼ tsp salt. Stir to combine.
- Scoop out heaping 1 tbsp of broccoli mixture and shape into a 1 in-long cylinder. Repeat with remaining mixture, placing tots 1 in. apart on prepared sheet. Bake until golden brown, 28 to 30 min.
