A touch of orange juice and honey makes these glazed carrots irresistible.

Ingredients

  • 2 tbsp butter, or margarine

  • 4 cups baby or regular carrots, peeled and cut into 2-in. sticks

  • 1 cup orange juice

  • 1/4 cup honey

  • 1/2 tsp salt

Instructions

  • Melt the butter in a large skillet. Add the baby carrots or carrot sticks and cook stirring, over medium heat, until they brown very slightly—about 10 minutes.

  • Add the orange juice, honey and salt and bring to a boil. Keep the mixture simmering, stirring once in a while, until the carrots are tender and glazed, about 15 minutes or so. Young baby carrots will usually cook faster than older ones—so you'll just have to taste one or two.
