Whether you’re indoors or out, these vegan chocolate grill cakes cooked in orange shells will satisfy every taste bud.
3 medium-sized naval oranges
1/2 cup all-purpose flour
1/2 cup granulated sugar
2 tbsp unsweetened cocoa powder
1/4 tsp baking soda
1/4 tsp salt
1/3 cup water
1 tbsp canola oil
1/2 tsp vanilla
1/4 cup chocolate chip
1/4 cup icing sugar
1 tsp water
Cut oranges in half and use a spoon to remove all the flesh. You will have 6 orange “bowls.” Trim bottom, if needed, to make oranges sit flat, but make sure not to cut too much in case you make a hole.
Combine flour, sugar, cocoa powder, baking soda and salt in a large bowl or sealable plastic bag and mix until uniform. Combine water, oil and vanilla in another bag or bowl. Add wet ingredients to dry ones and whisk or stir with a fork until combined. Then, add chocolate chips.
Scrape batter into prepared orange rinds, filling no higher than ½ in. from top. Lay on sheet of foil (to catch any drips) on a barbecue or grill over medium heat. Close lid of barbecue or tent another sheet of foil very loosely over top. Grill for 25 min or until cake has baked through.
Combine icing sugar and water in a bowl or sealable plastic bag until fully moistened and smooth. Use a fork (or snip the corner of the bag) to drizzle icing over cake.
