Slow Cooker Italian Wedding Soup

A delicious and hearty Italian Wedding Soup made in the slow cooker that kids will love.

Ingredients

  • 1 lb ground chicken

  • 1/2 cup bread crumb

  • 1 egg

  • 1/2 tsp onion powder

  • salt, to taste

  • black pepper, to taste

FOR SOUP:

  • 6 cups chicken broth

  • 1 cup orzo, or any small pasta

  • 1 pkg spinach, (stems removed)

  • shredded Parmesan

Instructions

  • To make meatballs combine first 5 ingredients and roll into 1/2 inch balls. Drop balls in a large pot of boiling salted water and simmer for 6 minutes.

  • Pour broth in slow cooker, adding meatballs. Cook on low for 6 to 8 hours or high for 3 hours. Half way through cooking add spinach and pasta.

  • Drizzle each bowl of soup with parmesan cheese before serving.
