Try this flavourful, smooth appetizer


  • 1 tbsp butter
  • 6 cups fresh or frozen shelled green peas
  • 4 cups chicken broth


  • Bring to a boil and simmer 5 minutes.
  • Whirl in a blender to purée.
  • Season with salt and pepper, and serve hot or cold.
