Potato Crispies

Here's another potato thing for your couch potatoes. Better than chips, crispier than french fries, this is the ultimate munch.

Ingredients

  • potatoes

  • salt, to taste

Instructions

  • Scrub any number of potatoes very well, and slice them very thinly - no thicker than 1/8 in. (3 mm) - without peeling. (I use the slicing blade of my food processor for this.) Drop the potato slices into a bowl of cold water as you cut them so they don't turn black.

  • Drain the slices well, and pat dry with a paper towel. Arrange, without touching each other, on a cookie sheet that has been sprayed with non-stick cooking spray. Spray the tops of the potato slices lightly, too, then sprinkle with salt. Bake at 400°F (200°C) for 10 minutes, turn the slices over and bake for another 10 minutes. If you think they aren't quite crisp enough, let them bake another 5 minutes or so, until they're sizzling and lightly browned.
