Maple Syrup Squares

These completely addictive squares were submitted by Phyllis Danforth of St. Chrysostome, Quebec. Phyllis claims that once you've tried one, you can't say no to a second. Unfortunately, she's right.

Ingredients

  • 1/2 cup butter, softened

  • 1/4 cup brown sugar

  • 1 cup all-purpose flour

Filling

  • 1 cup maple syrup

  • 3/4 cup brown sugar

  • 1/2 cup chopped walnuts

  • 1/4 cup butter

  • 2 eggs

  • 2 tbsp all-purpose flour

  • pinch salt

Instructions

  • In a bowl, combine the softened butter, - cup (50 mL) of brown sugar and the flour, mixing until crumbly. Pat into an 8 in. (20 cm) square baking pan. Bake at 350°F (180°C)for 8 to 10 minutes, just until set.

  • In a medium saucepan, combine the maple syrup, the 3/4 cup (175 mL) of brown sugar and the chopped walnuts. Bring to a boil, and cook over medium-low heat for 5 minutes. Remove from heat, add the - cup (50 mL) of butter and stir until the butter is melted.

  • In a small bowl, beat the eggs with the flour and a pinch of salt. Add to the maple syrup mixture, beating well to combine. Pour over the baked base, then return pan to the oven and bake for 25 to 30 minutes. Cool completely before cutting into squares.
