Fresh Herb and Feta Carrot Slaw

This vibrant and healthy carrot slaw ditches the mayonnaise in favour of a vinegar and oil-based dressing, topped with feta.
Ingredients

carrots

2 tbsp
white wine vinegar

1 tsp
honey

pinch
salt

pinch
black pepper

3 tbsp
olive oil

2 tbsp
chopped
dill
, (or mix of cilantro and parsley)

crumbled
feta
, to taste
Instructions
- Coarsely grate carrots (or cut into matchsticks) and put in a bowl.
- In another bowl, whisk white wine vinegar with honey, salt and pepper. Slowly whisk in olive oil. Drizzle over carrots and toss to mix.
- Overtop, sprinkle some crumbled feta and chopped dill.
