Baked by the endless pan-load, these cookies fed the hordes of hungry cousins that trooped through Denny's family cottage, dripping and hungry.
2 cups brown sugar
1 cup butter, melted
4 cups quick-cooking rolled oats, (not instant)
1 cup chocolate chips, or raisins (optional)
Preheat the oven to 375°F (190°C). Grease an 11 x 16 in. (28 x 40 cm) cookie pan with ½ in. (1.25 cm) sides.
In a large bowl, cream together the brown sugar and melted butter, until smooth. Gradually stir in the oats, until they're evenly coated with the sugar mixture. Add chocolate chips or raisins, if you're using them, and mix well. Press dough into the prepared baking pan, squishing it down evenly with a spatula. Bake for 10 to 12 minutes, or until the mixture bubbles and browns lightly on the edges. Watch carefully - they can burn quickly. Let cool for a minute or two, then cut into squares while still warm.
