Cracker Nacho Mini-sandwiches

Substitute a dollop of mild salsa for the jalapenos if your kids prefer.


  • 12 whole wheat crackers

  • 6 1/4-in. thick slices cheddar, (to fit crackers)

  • 6 slices canned or pickled jalapeno peppers

  • 2 tbsp salsa


  • Arrange 6 of the crackers in a single layer on a microwave-safe plate. On each cracker, place a slice of cheese, a slice of jalapeno pepper and 1 tsp (5 mL) salsa. Cover with the remaining crackers. Microwave on high power for about 30 seconds, or until the cheese melts.
