Colour-Coordinated Tortilla Pinwheels

For Jared's party we went green, of course: alfalfa sprouts, chopped broccoli and a few green olives. But you could go orange (shredded carrots, cheddar and a dab of salsa). Or pink (chopped ham and minced red pepper). We're working on blue.

Ingredients

  • flour tortillas

  • cream cheese, softened

  • shredded cheese

  • alfalfa sprouts

  • chopped avocado

  • chopped raw broccoli

  • finely chopped green or red sweet pepper

  • sliced olives

  • shredded carrot

  • chopped ham, or salami

  • chopped pickle

  • salsa

  • mustard

  • relish

Instructions

  • No matter what colour combo you'll be doing, first spread the flour tortillas evenly with a thin layer of softened cream cheese. This helps the filling ingredients stick and keeps the pinwheels rolled up. Now have your child help you sprinkle on whatever ingredients strike her fancy: shredded cheese, alfalfa sprouts, chopped avocado, broccoli, green pepper, olives, shredded carrots, cheddar cheese, chopped red pepper, a dab of salsa, etc.

  • Roll tortilla up as tightly as possible, keeping all the stuff inside, and squishing the end firmly together. Wrap each tortilla securely in plastic wrap and refrigerate for at least a couple of hours.

  • When ready to serve, unwrap rolls and slice in ½ in. (1 cm) pieces. Arrange on a platter and serve.
