Skip the usual sandwich for this tasty protein-packed dip. Don't forget your favourite pita, crackers and veggies for dipping! Sandwich diehards can enjoy this dip spread between bread or rolled in a tortilla.
2 hard-cooked eggs
3 tbsp mayonnaise
1/2 tsp Dijon mustard
pinch salt
pinch black pepper
1/4 green or red sweet pepper
1 tbsp chopped chives
Coarsely grate eggs into a small bowl. Stir in mayo, Dijon, salt and pepper. Finely chop green pepper and stir into egg mixture along with chives.
