Chive Egg-Salad Dip


  • Makes1 to 1 servings

Skip the usual sandwich for this tasty protein-packed dip. Don't forget your favourite pita, crackers and veggies for dipping! Sandwich diehards can enjoy this dip spread between bread or rolled in a tortilla.


  • 2 hard-cooked eggs

  • 3 tbsp mayonnaise

  • 1/2 tsp Dijon mustard

  • pinch salt

  • pinch black pepper

  • 1/4 green or red sweet pepper

  • 1 tbsp chopped chives


  • Coarsely grate eggs into a small bowl. Stir in mayo, Dijon, salt and pepper. Finely chop green pepper and stir into egg mixture along with chives.

  • Makes 1 serving.
