California Croissant Sandwiches

Pick up some freshly baked flaky croissants at the bakery to make these fancy-pants sandwiches for dinner. You can, of course, use leftover grilled chicken, or other meat, instead of the sliced deli turkey if you want.
Ingredients
- 4 croissants
- 2 tbsp mayonnaise
- 1 large ripe avocado , pitted, peeled and thinly sliced
- 250 g sliced deli turkey
- 1 cup alfalfa sprouts , rinsed and well drained
- salt , to taste
- black pepper , to taste
Instructions
- Slice the croissants horizontally and lay them all out on a platter. Spread a thin layer of mayonnaise on the cut sides. Now, using ¼ of the ingredients for each sandwich, first arrange a layer of avocado slices, then the turkey and finally the alfalfa sprouts. Sprinkle with salt and pepper and cover with the top halves of the croissants.
