Blueberry Power Bars

There’s a week's worth of breakfast in this pan of chewy, no-bake nutrient-dense power bars.

Ingredients

  • 1 ¼ cups quick rolled oats

  • ½ cup sliced almonds

  • ¼ cup flax seeds

  • ¼ cup roasted unsalted sunflower seeds

  • ¼ cup wheat germ

  • 1 cup dried blueberries

  • ½ cup almond butter

  • ⅓ cup honey

  • 2 tbsp coconut oil

  • 1 tsp vanilla

  • ½ tsp salt

Instructions

  • Line an 8-in baking pan with parchment and set aside.

  • In a large bowl, stir together oats, almonds, flax, sunflower seeds and wheat germ. Stir in blueberries.

  • Heat almond butter, honey, oil, vanilla and salt in a small saucepan over medium until combined. Stir in oat mixture until combined. Scrape into prepared pan, pressing down evenly to smooth the top. Refrigerate for 1 hour, then cut into squares or bars. Keep refrigerated up to 1 week or freeze individually wrapped bars for up to 1 month.
