There’s a week's worth of breakfast in this pan of chewy, no-bake nutrient-dense power bars.
1 ¼ cups quick rolled oats
½ cup sliced almonds
¼ cup flax seeds
¼ cup roasted unsalted sunflower seeds
¼ cup wheat germ
1 cup dried blueberries
½ cup almond butter
⅓ cup honey
2 tbsp coconut oil
1 tsp vanilla
½ tsp salt
Line an 8-in baking pan with parchment and set aside.
In a large bowl, stir together oats, almonds, flax, sunflower seeds and wheat germ. Stir in blueberries.
Heat almond butter, honey, oil, vanilla and salt in a small saucepan over medium until combined. Stir in oat mixture until combined. Scrape into prepared pan, pressing down evenly to smooth the top. Refrigerate for 1 hour, then cut into squares or bars. Keep refrigerated up to 1 week or freeze individually wrapped bars for up to 1 month.
