Blueberry Power Bars

There’s a week's worth of breakfast in this pan of chewy, no-bake nutrient-dense power bars.
Ingredients

1 ¼ cups
quick
rolled oats

½ cup
sliced
almonds

¼ cup
flax seeds
-
¼ cup
roasted unsalted
sunflower seeds

¼ cup
wheat germ
-
1 cup
dried
blueberries
-
½ cup
almond butter
-
⅓ cup
honey
-
2 tbsp
coconut oil
-
1 tsp
vanilla
-
½ tsp
salt
Instructions
- Line an 8-in baking pan with parchment and set aside.
- In a large bowl, stir together oats, almonds, flax, sunflower seeds and wheat germ. Stir in blueberries.
- Heat almond butter, honey, oil, vanilla and salt in a small saucepan over medium until combined. Stir in oat mixture until combined. Scrape into prepared pan, pressing down evenly to smooth the top. Refrigerate for 1 hour, then cut into squares or bars. Keep refrigerated up to 1 week or freeze individually wrapped bars for up to 1 month.
