Basic Quesadillas

Create a quesadilla buffet.

Ingredients

  • 8 large (10-in.) flour tortillas

  • 2 cups salsa

  • 2 cups shredded cheddar, or Monterey jack

Instructions

  • Place one flour tortilla on a flat surface. On half the tortilla, spread ¼ cup (50 mL) salsa and sprinkle with ¼ cup (50 mL) shredded cheese - leave a small border around the edge so that the filling doesn't leak out. Fold the tortilla in half, enclosing the filling.

  • Heat a heavy skillet or griddle over medium heat - no oil or grease required. When the skillet is hot, place the folded tortilla in the pan and cook for just a minute or two on each side until lightly browned and the cheese inside has melted. Remove to a cutting board and cut into wedges. Repeat with remaining tortillas.
