Banana Canoes

Bananas, marshmallows, chocolate. Don't try to resist. You're on vacation, remember?

Ingredients

  • bananas

  • marshmallows, (miniature or regular), cut up

  • chocolate chips

Instructions

  • With a sharp knife, cut a wedge out of the entire length of an unpeeled banana. Turn the banana over to your assistant and have her remove the wedge of banana (yes, she can eat it), reserving the strip of peel. Have her stuff the hollow in the banana with chocolate chips and marshmallows. Miniature marshmallows are easiest but you can also cut some regular ones up into pieces.

  • Replace the reserved strip of peel to cover the stuffing and wrap the entire banana by rolling it in foil wrap, winding the ends tightly to close. An adult should check the packages to make sure they're well-sealed.

  • Cook the canoes, turning frequently, over hot coals until chocolate and marshmallows are melted, around 10 minutes. You may have to unwrap one a little to check.
