This applesauce is so incredibly easy and delicious that you’ll never buy the stuff again. But wait! You can take this same applesauce and make chewy apple leather or luscious apple butter. Use any type of apple. Here’s the basic recipe – the variations follow.
8 cups peeled, cored and chopped apples
1/4 cup granulated sugar
1/4 cup water
In a microwave-safe 2 L bowl or casserole, combine the apple chunks, sugar and water. Stir just to mix, then cover loosely with waxed paper, vented plastic wrap or the casserole lid (leave it partially open to allow steam to escape). Microwave on high power for 10 to 12 minutes, stirring every 2 minutes, until the apples are soft enough to mash.
Remove bowl from microwave and let cool for 5 minutes. If you like your applesauce chunky, you can just use a potato masher to mash the sauce until it’s the way you like it. If you prefer your applesauce smooth, transfer it to a blender or food processor, and blend until smooth.
