Three Fabulous Salad Dressings for Three Fabulous Salads!


Ingredients

  • 3/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 small garlic clove , pressed
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Buttermilk Ranch Dressing

  • 3/4 cup mayonnaise
  • 1/2 cup buttermilk
  • 1/4 cup buttermilk powder
  • 1 small garlic clove
  • 1 green onion , trimmed and cut into 1-in. pieces
  • 1 tbsp chopped parsley
  • 1/4 tsp black pepper

Golden Caesar Dressing

  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup grated Parmesan
  • 2 garlic cloves
  • 1 1/2 tsp Worcestershire sauce
  • 1 tsp anchovy paste , (or about 2 anchovy fillets), optional
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup olive oil

Instructions

  • In a blender, combine the lemon juice, Parmesan cheese, garlic, Worcestershire sauce, anchovy paste, salt and pepper. Blend until smooth, scraping down the sides so that everything mixes evenly.
  • Place the lid back on the blender and remove the cover from the small opening in the lid.
  • With the blender running, slowly add the olive oil to the container, blending until the dressing is smooth and all the oil is incorporated. Makes about 1 /4 cups (300 mL) dressing.

Balsamic Viniagrette

Instructions

  • Combine all the ingredients in a jar with a tight-fitting lid and shake until thoroughly combined. Makes about 1 cup (250 mL) dressing.
