Ingredients
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 1/8 tsp salt
- 4 cups peeled, grated carrots
- 1/4 cup dried cranberry
- 3 tbsp chopped dill
Instructions
- Whisk first 5 ingredients in a medium bowl. Add carrots, cranberries and dill. Toss to coat.
- Chill until ready to serve.
