Sweet and sour carrot slaw

Ingredients

  • 3 tbsp olive oil

  • 2 tbsp apple cider vinegar

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • 1/8 tsp salt

  • 4 cups peeled, grated carrots

  • 1/4 cup dried cranberry

  • 3 tbsp chopped dill

Instructions

  • Whisk first 5 ingredients in a medium bowl. Add carrots, cranberries and dill. Toss to coat.

  • Chill until ready to serve.
