3 tbsp olive oil
2 tbsp apple cider vinegar
1 tsp Dijon mustard
1 tsp honey
1/8 tsp salt
4 cups peeled, grated carrots
1/4 cup dried cranberry
3 tbsp chopped dill
Whisk first 5 ingredients in a medium bowl. Add carrots, cranberries and dill. Toss to coat.
Chill until ready to serve.
