Red, White and Green Slaw

  • Makes4 to 4 servings

Ingredients

  • 2 cups shredded Napa cabbage

  • 2 cups shredded red cabbage

  • 1 cup grated carrots

  • 2 chopped green onions

  • 1/4 cup chopped cilantro

  • 1/4 cup seasoned rice vinegar

  • 2 tbsp granulated sugar

  • 1/2 tsp sesame oil

  • hot-pepper flakes

  • white pepper

Instructions

  • In a large bowl, combine 2 cups (500 mL) shredded Napa cabbage, 2 cups (500 mL) red cabbage, 1 cup (250 mL) grated carrots, 2 chopped green onions and 1⁄4 cup (50 mL) chopped fresh coriander.

  • Whisk together in a small bowl: 1⁄4 cup (50 mL) seasoned rice vinegar, 2 tbsp (30 mL) granulated sugar, 1⁄2 tsp (2 mL) sesame oil and a pinch each red pepper flakes and white pepper.

  • Toss this dressing with the slaw veggies, and season with salt to taste.

  • In a serving of Red, White and Green Slaw: 54 calories, 0.8 g protein, 0.5 g fat, 12.1 g carbohydrates, 1.2 g dietary fibre, 32 mg calcium.
