My Favourite Sweet Noodle Kugel

  • Makes4 to 4 servings

My Favourite Sweet Noodle Kugel According to Jacob Houpt, no Friday night dinner at the Houpt household is complete without this dish. It reheats beautifully, and can be served as either a light main course or a side dish.

  • 375 g medium-width egg noodles

  • 1 egg, beaten

  • 1/4 cup butter, melted

  • 1/4 cup granulated sugar

  • 1 tsp ground cinnamon

  • 1 tsp your favourite jam, (a "heaping" spoonful, according to Houpt)

  • 1/4 cup raisins

  • Cook the noodles in a big pot of boiling salted water until tender. Drain in a colander, then rinse under cold running water and drain again. In a large bowl, combine the melted butter, egg, sugar, jam, cinnamon and raisins. Add the cooked noodles and stir well to coat with the butter mixture. Scoop into a greased loaf pan, smoothing the top as much as possible. Bake at 350 F (180 C) for 40 minutes, or until browned and crispy on top. Serves 4 or 5 as a main course or more as a side dish.
