My Favourite Sweet Noodle Kugel According to Jacob Houpt, no Friday night dinner at the Houpt household is complete without this dish. It reheats beautifully, and can be served as either a light main course or a side dish.
- 375 g medium-width egg noodles
- 1 egg , beaten
- 1/4 cup butter , melted
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 1 tsp your favourite jam , (a "heaping" spoonful, according to Houpt)
- 1/4 cup raisins
- Cook the noodles in a big pot of boiling salted water until tender. Drain in a colander, then rinse under cold running water and drain again. In a large bowl, combine the melted butter, egg, sugar, jam, cinnamon and raisins. Add the cooked noodles and stir well to coat with the butter mixture. Scoop into a greased loaf pan, smoothing the top as much as possible. Bake at 350 F (180 C) for 40 minutes, or until browned and crispy on top. Serves 4 or 5 as a main course or more as a side dish.
