Leftover Mashed Potatoes

  • Mix mashed potatoes with an egg, and spread evenly into a greased pie plate. Bake at 350F (180C) for 10 minutes. Fill with your favourite quiche mixture and bake as usual. Instant potato pie crust.

  • Stir leftover mashed potatoes into vegetable soup to thicken it.

  • Add leftover mashed potatoes to your usual meat loaf or meatball mixture.

  • Mix with other leftover vegetables (chopped broccoli, carrots, peas, whatever), add an egg and some bread crumbs, and form into patties or nuggets. Pan fry or bake. Ta da - croquettes!
