Great served as a side dish for grilled or roasted fish or chicken.
2 zucchinis, any colour
2 peppers, any colour
pinch salt and pepper
pinch freshly grated nutmeg
Cut zucchini and peppers into chunks. Coat a large frying pan with oil and set over medium-high heat. Coat a large frying pan with oil and set over medium-high heat.
When hot, add zucchini and peppers. Sprinkle with pinches of salt and pepper. Sauté until tender-crisp, about 5 minutes.
Sprinkle with nutmeg and squeeze a little orange juice overtop.
