Garden Zucchini Pepper Sauté

Great served as a side dish for grilled or roasted fish or chicken.


Ingredients

  • 2 zucchinis , any colour
  • 2 peppers , any colour
  • olive oil
  • pinch salt and pepper
  • pinch freshly grated nutmeg
  • orange juice

Instructions

  • Cut zucchini and peppers into chunks. Coat a large frying pan with oil and set over medium-high heat. Coat a large frying pan with oil and set over medium-high heat.
  • When hot, add zucchini and peppers. Sprinkle with pinches of salt and pepper. Sauté until tender-crisp, about 5 minutes.
  • Sprinkle with nutmeg and squeeze a little orange juice overtop.
