Cucumber Yogurt Dressing

Ingredients
- 1 cup grated English cucumber , (wash, but don't peel)
- 1 cup plain yogurt , (low fat or regular)
- 1/4 tsp salt
Instructions
- After grating the cucumber into a strainer, squeeze as much of the liquid out by hand as possible. This is a good job for a kid – just have her grab a handful and squish out all the water. Transfer to a bowl. Stir in the yogurt.
- Line a strainer or colander with a paper coffee filter and place it over a bowl. Dump the yogurt mixture into the filter and let it drain, refrigerated, for several hours (or overnight). The longer you drain it, the thicker it becomes – I prefer it to be the consistency of mayonnaise. Spoon the yogurt mixture into a bowl and stir in the salt. Taste and adjust the seasoning if necessary.
