Basic Vinaigrette Dressing

This is a no-nonsense dressing which can be used as is, or be the start of some more elaborate concoction. Use any kind of oil you like, and whatever vinegar you happen to have in the house. Experiment with different oils and vinegars (or try lemon juice instead), add herbs, spices, grated cheese, garlic, ketchup, mustard - mess around with this and see what you come up with.

Ingredients

  • 1/2 cup olive oil, (or another oil)

  • 1/4 cup vinegar

  • salt

  • black pepper

Instructions

  • In a small bowl, whisk the ingredients together until thoroughly mixed.

  • Makes about ¾ cup (175 ml) of dressing - enough for a large salad. Dressing can be kept in the fridge practically forever. The oil may thicken when it's chilled, but it will re-liquefy at room temperature.
