Baked-to-death Tomatoes

You can't imagine how good these are. And don't be discouraged by the lo-o-o-ng cooking time. Just go sit on the deck and read a magazine or something. They'll be done eventually. And it will be worth every minute it took.

Ingredients

  • 4 large tomatoes

  • 2 garlic cloves

  • 4 tsp olive oil

  • salt

  • black pepper

Instructions

  • Wash tomatoes, remove the stem if there is one, and cut each tomato in half crosswise. Place in a shallow baking dish, cut side up. Cut the garlic cloves into lengthwise slivers. Stab garlic slivers into the cut side of the tomato halves, dividing them equally between the tomatoes. Bake, uncovered, at 325°F (160°C) for 2 hours. Yes, really, t-w-o hours. Drizzle tomato halves with olive oil and sprinkle with salt and pepper. Return to the oven and bake for one more hour. No kidding. Trust me. Serve hot or at room temperature.
