These gluten-free honey-glazed chicken skewers are perfect for grilling outside during summer, or on a grill inside during cooler months.
3 tbsp olive oil
2 tbsp lemon juice
1 tbsp honey
1 tbsp finely chopped garlic
1 tbsp chopped oregano
1 tsp Dijon mustard
1/4 tsp salt
1/4 tsp black pepper
1 1/2 lb. boneless, skinless chicken breasts, cut into 1-in. cubes
1 red sweet pepper
Combine olive oil, lemon juice, honey, garlic, oregano, mustard, salt and pepper in a large bowl and stir until honey is fully incorporated. Add chicken and toss to coat. Let stand 20 min to marinate, then thread on metal or soaked wooden skewers, alternating with pieces of red pepper.
Heat barbecue on high. Grill chicken skewers, turning every 2 to 3 min for 10 min, or until evenly browned and meat is cooked through.
