The flavour and colour of this cut are top-notch, but it can be a little chewy if overcooked, so keep it rare-ish in the middle

4 hanger steaks
salt, to taste
black pepper, to taste
Season meat on all sides with salt and pepper, or use "Smoky Blade Steak" rub (search our Recipe File). Preheat broiler and cook steaks about 3 in (8 cm) from the heat, 7 to 8 minutes per side. (You can also cook on an outdoor grill, preheated to high; just be careful not to overcook). Let meat rest 5 to 10 minutes before digging in.
