The flavour and colour of this cut are top-notch, but it can be a little chewy if overcooked, so keep it rare-ish in the middle Recipe by Bonny Reichert
- 4 hanger steaks
- salt , to taste
- black pepper , to taste
- Season meat on all sides with salt and pepper, or use “Smoky Blade Steak” rub (search our Recipe File). Preheat broiler and cook steaks about 3 in (8 cm) from the heat, 7 to 8 minutes per side. (You can also cook on an outdoor grill, preheated to high; just be careful not to overcook). Let meat rest 5 to 10 minutes before digging in.
