Vanilla Maple Tropical Fruit

I have created this concoction with pineapple, banana and strawberries. But if you have other ideas, go right ahead.
Ingredients
- 4 cups fresh pineapple , banana and strawberries, cut into 1/2-in. chunks
- 1/2 cup plain yogurt
- 1/4 cup pure maple syrup
- 1 tsp vanilla
Instructions
- Mix together the fruit in a large bowl. In another bowl, stir together the yogurt, maple syrup and vanilla. Add about – of the yogurt mixture to the fruit in the bowl, and stir gently to mix (be careful not to mush up the fruit). Reserve the remaining yogurt mixture.
- Serve the fruit spooned over waffles or French toast, or rolled into crepes (recipes above). If serving with crepes, drizzle a little of the reserved yogurt mixture over the filled crepes.
