I have created this concoction with pineapple, banana and strawberries. But if you have other ideas, go right ahead.
4 cups fresh pineapple, banana and strawberries, cut into 1/2-in. chunks
1/2 cup plain yogurt
1/4 cup pure maple syrup
1 tsp vanilla
Mix together the fruit in a large bowl. In another bowl, stir together the yogurt, maple syrup and vanilla. Add about - of the yogurt mixture to the fruit in the bowl, and stir gently to mix (be careful not to mush up the fruit). Reserve the remaining yogurt mixture.
Serve the fruit spooned over waffles or French toast, or rolled into crepes (recipes above). If serving with crepes, drizzle a little of the reserved yogurt mixture over the filled crepes.
