Holiday Mocktails: Cranberry Ginger Sparkler

Festive flavours stir up into a delightful drink that is simple to make, yet special enough to bring sparkle to any gathering. To make it as a punch for a crowd, multiply by four times and serve in a punch bowl with an ice ring or frozen whole cranberries. Add the sparkling juice just before serving to keep it fizzy.
- ice cubes
- 2 tsp minced fresh ginger
- 2 cups cranberry cocktail
- 2 cups non-alcoholic sparkling apple juice , or cider, sparkling mineral water or club soda
- In a glass measuring cup, stir ginger into cranberry cocktail. Cover and refrigerate for at least 4 hours or for up to 1 day until infused with ginger flavour. Strain through a fine mesh sieve, discarding ginger. Place ice in 4 tall serving glasses and pour strained cranberry cocktail over ice, dividing evenly. Pour in sparkling juice and serve immediately with a swizzle stick.
