  • 2 cups diced cooked chicken
  • 1/4 cup diced cucumbers
  • 1/4 cup diced green sweet pepper
  • 1/4 cup diced red onion
  • 1/4 cup pitted, quartered black olives
  • 1/4 cup crumbled feta
  • salt , to taste
  • black pepper , to taste
  • bread , (your choice)
  • 2 tbsp mayonnaise
  • 2 tsp lemon juice
  • 1/4 tsp crumbled dried oregano


  • In a bowl, mix together the chicken and ingredients. In a separate small bowl, mix together the dressing ingredients. Add dressing to the chicken mixture and combine well. Taste, then season with salt and pepper if desired. Pile onto bread or stuff into pita or roll into tortillas.
