Scrambled Eggs in the Microwave

Make scrambled eggs in the microwave in a minute and a half. So easy - and fast - you can make this even before you've had your cup of coffee.

Ingredients

  • 2 tsp butter

  • 2 eggs, lightly beaten

  • salt, to taste

  • black pepper, to taste

Instructions

  • Measure butter into a medium-sized microwave-safe bowl. Place in the microwave and cook on high power for 30 seconds - or until melted and hot. Remove bowl from microwave, gently swirl the butter to slightly coat sides of the bowl, then pour in the eggs.

  • Cook for 30 more seconds. Stir to break up the clumps that will have formed around the edges. Continue to cook at 10-second intervals, stirring well after each, until eggs are done the way you like them - about 30 to 45 seconds more, depending on the microwave.

  • Scrambled ham and eggs variation: Add ½ cup (125 mL) chopped ham to the eggs in the recipe above. After the first 30 seconds of cooking, stir egg mixture every 15 seconds for an additional 1 to 1 ½ min total. (Timing will depend on your microwave, so you'll have to be the judge of when they're done.)
