Some people call this stuff rice pudding. Well, to each, his own. Whatever you call it, this microwave recipe is so easy it’s almost spooky.
1/2 cup short-grain white rice, (uncooked)
1/3 cup granulated sugar
4 cups milk
1 tsp vanilla
1/4 cup raisins
ground cinnamon
In a 3-quart microwave-safe bowl or casserole dish, combine rice, milk and sugar. Cover tightly with plastic wrap, then poke a couple of vent holes into it with a sharp knife. Microwave on high for 8 to 10 min, until mixture comes to a boil.
Remove plastic, stir mixture and return the bowl to the microwave, uncovered. Cook on medium for 40 to 45 min, stirring every 10 min or so. The rice ("maggots") should be tender and the pudding ("miasma") should be creamy.
Stir in the vanilla and the raisins and spoon into individual bowls, sprinkling each one with cinnamon. Serve warm with milk immediately, or serve chilled later.
