Quick Couscous

  • 1 orange
  • chicken broth
  • 1 cup couscous
  • handful broccoli florets
  • tofu , or feta, or cooked chicken, or cooked turkey


  • Squeeze juice from 1/2 orange into a measuring cup. Top with chicken broth until liquid measures 1 cup (250 mL). Bring to a boil in a small saucepan. Stir in 1 cup (250 mL) couscous. Top with a handful of broccoli florets. Cover and let stand for 5-10 minutes, then fluff with a fork. Stir in cubes of tofu, feta, cooked chicken or turkey. Top with slices from remaining 1/2 orange.
  • Make ahead: couscous will keep well, covered and refrigerated, for up to 1 day.
